Have you heard the saying, “breakfast is the most important meal of the day”? In my world, I like to call it my favorite meal of the day. Since I’m a person that thrives when my world is consistent and routine based, breakfast has become a bit of a ritual. I wake up looking forward to sitting down with a warm plate of food and a hot cup of creamy coffee.
For kicks, I thought it would be fun to bring you along this morning as I made breakfast.
If our youngest decides to sleep in a little bit in the morning, I savor a little bit of peace and quiet to start my day. I have found that I am a much more thoughtful, patient, and energetic mom when I give my mind and body time to wake up before my kids. It seems to help me feel less overstimulated and overwhelmed by the constant stream of conversation that begins when they joyfully burst out into the living room. Today, that ended up being the case. After waking up enough to put one foot in front of the other, I made my way to the kitchen.
Okay, on to breakfast.

I always start my breakfast making ritual by putting my little Xtrema pan on the hot stove. (Keep an eye out for a blog post about all of my favorite non-toxic cookware). While I’m waiting for the pan to heat up, I cut up some vegetables for my scramble and then throw it all in the pan with some grassfed butter.

Once the veggies are soft, I mix in two eggs and put the lid on. As a quick aside, eggs used to make me feel sick. Now they’re one of my favorite foods. I share the resource below that made that all possible and inspired me to change my way of eating (seriously, her resources are a legit game changer). But that being said, one of the biggest things that has transformed eggs from hurtful to helpful has been the quality of eggs we purchase. I learned from Kate Deering that organic, pasture raised eggs are the most nutrient dense and bioavailable for the body. Since switching from typical grade A eggs to the organic, free range and/or pasture raised eggs I can access affordably, things took a positive 180.

I digress, back to my breakfast ritual.
Usually within a minute or so of putting them in my Xtrema pan, my eggs are ready to devour. Today, they looked extra yummy. And please don’t judge, I love ketchup on my eggs (well, really anything for that matter), so that always goes right on top.

My favorite part of the morning, though, is drinking my cup of coffee. Up until last May, I hadn’t been able to tolerate coffee for over 5 years. That all changed when I discovered Fallon’s Table. Her meal plans transformed how I was able to consume things like dairy and coffee. Ever since, I look forward to drinking my warm cup of coffee with ample cream and sugar.

There’s something about simple pleasures that really hits home for me. It makes the day-to-day mundane and stress feel more tolerable. And I believe there’s something to be said about those simple pleasures helping me slow down and become more grateful for the beauty right in front of me.

I don’t even have kids and I still love getting up early to have a quiet hour before the hubby gets up and we start our day!
That is an easy breakfast! Eggs are so simple, but they’re so incredible too. I am always full longer if I eat a protein like an egg in my breakfast.
Love this post! Breakfast is also my favorite meal. I will have to try adding more eggs to my diet. As someone who has a background in animal science, I agree that fresh brown eggs raised on pasture are so delicious and nutrient dense!
